"For anyone who joins with the Lord", does this mean one has to convert to Judaism in order to join him/herself to the Lord?

I think it may be the other way round. If you join yourself to the LORD, then you will be drawn to Israel/Judah as they are or at least should be joined to the LORD.

A rabbi told me that verse means having to convert which is why I am looking into it. This is important because if it relates only to those who converts then am I doing wrong by keeping the Sabbath since I am not a convert?

Hear is how to be smarter than the rabbi:
Psalms 119:99 I have more understanding than all my teachers: for thy testimonies are my meditation.
Keeping the Sabbath is a testimony of God. Meditate on that more.
