This Wikipedia article notes a lot of difference between Sephardic and Mizrachi customs versus Ashkenazic. Very helpful.

I have a nice little computer program that has all the prayers in chants, with music, and transliteration from the Hebrew, that highlights as you go from syllable to syllable in the transliteration or in Hebrew, with a text translation, ability to print music and prayers, and so forth.
The New Tefillah Trainer is a little computer program that is interactive, with music, chanting in Askenazi and Sephardic, for Orthodox, Conservative and Reform.
I found it at the Hewbrew4Christians site, which surprised me, but they are trying for all things Hebrew.

It is expensive, though, at $155.00, but it really works, and really is interactive.
