Can someone explain to me how chicken is 'clean' and fit to eat? I have been reading about clean and unclean and there seems to be a pattern - the clean animals are vegetarian and/or don't eat carrion. However, chickens eat all manner of bugs and slugs (unclean animals), as well as grain, so how can they be clean?

Chicken has white breast meet. The listed unclean fowl do not. At least the ones that I have butchered in the past.

A Little more detail:
Characteristics of clean fowl are, of course, determined by the dove,the pigeon (Luke 2:24 and Leviticus 1:14-17) which are used for sacrifice and the quail which were consumed in the desert.
By comparing the differences between these clean birds and those listed as unclean, we can arrive at the following six characteristics of clean birds: 1) they must not be birds of prey; 2) they have white breast meat; 3) they must have an elongated middle front toe and a hind toe; 4) they must spread their toes so that three front toes are on one side of a perch and the hind toe on the other side; 5) they must have craws or crops; 6) they must have a gizzard with a double lining which can easily be separated.
Clean birds have all these characteristics; unclean birds lack one or more of these characteristics. If a bird lacks any one of these characteristics, it is unclean.
Beside the Quail, pigeon and dove, the following birds are also clean: chicken, pheasant, partridge, grouse, turkey, all song birds

Birds, all birds, are pretty nasty. I grew up around farming and ranching, and I've seen chickens pecking through the excrement of other animals for undigested seeds. But I've also seen cattle drink from the nastiest puddles as well. A sheep herder once told me that was a big part of his job was watching they didn't drink from such pools as it would make them sick; even kill them. But he said they'd drink from a rut just short of a clean water source. So looking at animals from a standpoint of what we think of as clean eating, we'd all be vegans! Thankfully Elohim told me it was OK to eat some animals.
Everyone here is correct though, He didn't say "just eat everything because I changed my mind." Elohim Himself clearly translated that dream for us. And dreams are comprised of symbols, very rarely to be taken literally. So to ignore the divine interpretation and assign their own meanings is demonically inspired and not of God.
Veganism, by the way, is an affront to God. It is man's attempt to say "look, we are more spiritual and more compassionate, because we don't kill animals for food." But if you look at the unclean animals, many (like humans) have a third artery along the spine which can keep the brain aware, but it is not enough to support normal functioning for long. Even if there is nothing else wrong, compromising the two main arteries puts them in a state like a perpetual bad dream. I've been present when many animals were butchered. Hogs definitely have an awareness longer than cattle. Fortunately with their throats cut they bleed out and don't suffer too long. But clean animals are out before a two count. So their use either for food or as a sacrifice is humane; especially since to be truly kosher a Rabbi certifies they were killed in one clean stroke with a very sharp knife. Their deaths are a reminder to us of the price paid for our sinful state. This is another thing vegans want to avoid is that reminder they are not so pure of heart as they think.

edit: fowl of course is a different thing. Chickens are easily beheaded, and they do, as the old saying goes, run around the barnyard "like a human with his head on wrong." But that is a neurological response. ... Probably true of the chicken too!
