I have read this area with great interest, but have a couple of questions:
From being young, I have been taught that I should eat liver as it is a good source of iron for the body. Can I still eat it, or would it not be suitable?
Ditto kidneys?
There are no kosher shops near me and I am reliant on the supermarkets. How will I know if the turkey sausages I am buying have pork skins, for instance? It doesn't always make it clear on the label. Or if the meat is going to be acceptable - the means of killing here in the UK means the blood is often drained anyway, though possibly not to true kosher standards (whatever those might be).
Finally, and maybe this should be a separate thread, how can I know that the food laws are applicable to a New Testament Christian? I accept Sabbath and the feast days - those are fairly obvious. I also accept that the civil laws pertaining to Israel as a nation cannot be applicable because we do not live in a theocratic kingdom in a physical Israel. The laws about sacrifices I do believe have finished - especially as there is no Temple. But the food laws seem a grey area to me. Not meaning to offend; simply trying to understand.

You can know that the laws of kashrut (eating kosher) apply to you because they were written in ; and according to Yeshua none of these laws have yet passed (looking out my window to make sure heaven and earth are still there ... yep!). However I am once again in a situation where there is no source of kosher foods; and my wife wouldn't keep kosher anyhow. So once again I just do the best I can. I read labels, but like you said they aren't always 100% accurate. I sound like a broken record here- but we do the best we can.
I trim away fat and don't eat anything with an excess of blood in it, or that is made from blood. Liver has a lot of blood, and the kashering process doesn't work on it, so technically it must be broiled. Other meat is drained at slaughter, but when prepared it is kashered by packing in kashering salt. This I don't do either, as I'm not sure where that requirement came from. And as I said, my wife won't do it anyhow so there we are.
I don't really know about other organs, such as kidneys. I would think that if the animal is kosher it would be ok. I eat beef franks, and I shudder to think what all might go into those!

Leviticus 3:4 And the two kidneys, and the fat that is on them, which is by the flanks, and the caul above the liver, with the kidneys, it shall he take away.
We butchered a cow last first day. We didn't keep any organ meat or fat. It appears that the lever without the caul can be used. But I can't stand the taste of liver. The kidneys are not use according to scripture.
Look for the Kosher symbol on prepared meats to avoid the pork casing.
